Kader, known for his Michelin-starred Wana Yook and the nose-to-tail ethos of 100 Mahaseth, brings a philosophy rooted in full ingredient utilization and deep respect for Thai culinary heritage. Meanwhile, Triyasenawat, celebrated for Samuay & Sons, channels the bold, punchy flavors of Isaan and Northern Thailand, elevating regional cooking with contemporary precision.
At the center, Pak Yamoo acts as the unifying force, translating these philosophies into dishes that feel both cohesive and quietly daring.
What emerges is not fusion for the sake of novelty, but a confident reinterpretation of familiar flavors. The menu is à la carte - refreshingly free from the ceremony of tasting menus - and designed for sharing, echoing the Thai tradition of samrub, where dishes are meant to be experienced collectively rather than individually.
